Vegan Overnight Oats with Chia Pudding is my breakfast go-to, and it’s a delight to wake up to breakfast already prepared. I can vouch that mornings are hectic enough. We always seem to give ourselves just enough time to get ready in the morning, preferring 5 more minutes of sleep over a more relaxing morning. It’s also a versatile breakfast: change up the fruit you use, add a dash of vanilla or a sprinkle of cinnamon, and you’ve got a new flavor to try!
One of the reasons I love Vegan Overnight Oats with Chia Pudding is because it’s a great way for me to get my fiber without worrying about how it’ll affect my IBS. Oats are high in fiber, but when I soak them overnight they become soft enough to easily digest. We recommend quick oats rather than steel cut, because they don’t have to be cooked but can just soak. They become even tastier once they have sat long enough to marinate with all the fruit juices. We also prefer to use the unsweetened Alpro Soya Coconut yogurt flavor for these overnight oats. This combination is delicious, and we find other brands are quite pricey or have too high of a fat content. The yogurt also adds a healthy probiotic.
Lastly, the chia pudding itself: Chia seeds are known for their high fiber and omega content. They are fiber soluble, which means when they come into contact with water they form a protective gel layer around the seed. This mass then moves slowly through the digestive tract and helps to moderate things. I like to mix the chia pudding with the overnight oats along with my desired fruit toppings, and just like that you’ve got a healthy, high in soluble fiber, delicious, cruelty-free breakfast already waiting for you!
